Buffalo Chicken Grilled Cheese Sandwiches

Our house lately has been all about the buffalo chicken. I made buffalo chicken sandwiches, buffalo chicken dip, and the other morning J even smothered his hashbrowns and eggs in the spicy buffalo sauce.

If you like all things buffalo sauce just as much as we do, then this easy recipe won't disappoint.

I got this quick and easy recipe from Jennifer over at Life in the Green House. Have you all checked out her blog? She posts some great recipes and her daughter is too cute!

What you'll need:
-shredded chicken (I used a little less than half a rotassire chicken which made two large sandwiches)
-buffalo chicken sauce (we prefer Franks)
- shredded mozarella cheese
-Texas Toast bread
Start by laying out your bread. I'm sure most of you know what Texas Toast bread is, but just in case-it is thicker and a little larger than regular bread.
Place shredded chicken in a bowl, add buffalo sauce to liking, and mix well.
Butter bread on side and place on a heated skillet.
Add mozarella cheese, followed by your chicken. Then top with more cheese!

Place the other piece of bread back on top. Cook on each side until golden brown and cheese is melted.
