Crock Pot Chicken & Black Bean Nachos

By now you've probably heard of (and tried) the recipe for crockpot chicken. Ya know the one with the chicken, salsa, and taco seasoning. Well, instead of just using the chicken to make tacos or burritos, I like to use it to make nachos. Yum.

What You'll Need:
-chicken breasts
-taco seasoning
-tortilla chips
-black beans
-shredded cheese
-sour cream (optional)

Doesn't get much easier than that. There's no real measurements so I just place the chicken in the crockpot, dust them with the taco seasoning, and then add enough salsa to cover them thoroughly.
Cook on low for 6-8 hours or on high for 5.
Once the chicken is cooked, shred it with two forks and then place it back into the crockpot.

The nachos don't need much explaining, but in case you are a rule/recipe follower like a layer of tortilla chips on a baking sheet (I line mine with foil for easy clean up). Next add the chicken, beans, and top with cheese. Again, no exact measurements so add as much or as little of each as you like. 

Bake at 350 degrees until cheese is melted. We eat ours right of the baking sheet and with sour cream. The best part? Don't feel like nachos tomorrow? You can use the leftover chicken to make tacos, burritos or even lettuce wraps.

  2. I love making chicken in the crock pot for shredding for recipes- it's so moist and juicy and tastes amazing! I've never made it with salsa and taco seasoning. Yum! And we love nachos too- can't wait to try this!
