Cream Cheese Chicken Enchiladas

This recipe came to be by total accident. I originally set out to make Lisa's White Chicken Enchiladas, but one of the kids screamed and instead of adding sour cream, I added cream cheese. I know, it could be worse, but dang it I really wanted to try that recipe.

Luckily all ended well and not only was the end result edible, but pretty delicious. 

What You'll Need:
-Tortillas (5-8 depending on how big you stuff em)
-Chicken breasts (I sliced mine, but next time I'll use shredded)
-1 1/2 cups shredded cheddar cheese
-1/2 can corn
-1/2 can black beans
-1 can cream chicken
-1/2 cup cream cheese
-1/4 of a taco seasoning packet

1. Begin by combining the cream of chicken, cream cheese, and taco seasoning in a deep pan. Stir until cream cheese is melted. While the cream cheese mixture is softening, slice chicken and cook until done.
2. Spread a thin layer of the cream cheese mixture onto one half of a tortilla. 
3. Layer cooked chicken on top of cheese.
4. Add corn. I used 1/2 can total for all tortillas, but you can add more or less depending on your preference.

5. Add beans. Same as the corn on terms of how much. I only did beans in half of the tortillas since I don't really like them.
6. Place shredded cheese on top. Use 1/2 cup of shredded cheese between all the tortillas. 
7. Roll tortillas and place in a greased 9x13 in pan.
8. Spread the remaining cream cheese mixture over the top of the tortillas.

9. Sprinkle the remaining 1 cup of cheese over the tortillas. 
Bake at 350 degrees for 20 minutes. Serve with sour cream and salsa.
