Brown Sugar & Cinnamon Banana Muffins

Need something to make with those bananas about to go bad, but don't want to make another banana bread? These muffins are the perfect amount of banana and yummy cinnamon sugary goodness all wrapped up in an individual serving.

I adapted this recipe from Betty Crocker and I think the addition of the brown sugar makes it perfect!

What You'll Need:
(for muffins)
-2/3 cups sugar
-1/2 cup vegetable oil
-2 eggs
-2 ripe bananas (small-medium size) mashed
-1 tsp vanilla
-1 2/3 cup flour
-1 tsp baking soda
-1/2 tsp salt
-1/2 tsp cinnamon

(for topping)
-1/4 cup white sugar
-1/4 light brown sugar
-1/4 cup melted butter

Preheat oven to 375 degrees. In a bowl, combine sugar, oil, eggs, vanilla, & mashed banana.

In a separate bowl, mix thoroughly flour, baking soda, salt, & cinnamon.

Slowly combine dry ingredients into the wet until mixed through. Pour the batter into cupcake liners and bake for 17 minutes or until toothpick inserted comes out clean.

In a small bowl, mix the white sugar, brown sugar, and cinnamon. In another small bowl melt butter.

Once muffins are done baking, dip the tops of the muffins into the butter and then sugar mixture. 

Avoid licking the tops of all the muffins and enjoy warm!

  1. Hi! I'm visiting from the link up and these look absolutely amazing. I have never been so excited to have two bananas in my fruit basket that are past their prime. Ha! I was going to cut them up and pop them in the freezer, but I'm making these in the morning instead. Thanks for the recipe!
