Creamy Jalapeño Popper Dip

As it's name suggests, this dip is well... creamy. And just the right amount of spiciness and jalapeños that it gives it a little kick, but not so much you'll be sweating while eating it. There are LOTS of recipes out there for jalapeño dips, so I've combined a few and tweaked some to make this cheesy creamy goodness.

What You'll Need:
-4 oz jarred jalapeños (diced). If your store sells the Sweet n Hot kind get that. It gives it a little extra kick.
-2 tbsp juice from jar
-8 oz cream cheese
-1 cup sour cream
-1 1/2 c shredded Colby Jack of Cheddar
-3/4 c parmesan cheese
-9 in round pan or 8x8 pan
For the Topping:
-1/8c cup parmesan cheese
-1/2 c Italian bread crumbs
-2 tbsp butter

Start by dicing your jalapeños into small pieces if needed
To the peppers add the cream cheese & sour cream. Mix well
Next add the parmesan cheese and shredded cheese. Mix again and add 1 tbsp at a time of the pepper juice
Once all ingredients are combined, place in a 9 in round pan or 8x8 in pan

Now to make the topping. In a bowl combine bread crumbs, and remaining parmesan cheese (1/8 c). Then slowly add the butter until it creates a crumb mixture.

Spread the crumb mixture over the cheese mixture. Go lightly and don't feel like you need to use it all. A little of this goes a long way. Bake for 20 minutes at 400 degrees or until cheese is bubbly and heated through.
