Creamy Jalapeño Popper Dip

As it's name suggests, this dip is well... creamy. And it has just the right amount of kick. There are LOTS of recipes out there for jalapeño dips, so I combined a few different ones to make this cheesy creamy goodness.

What You Need:

-4 oz jar of diced jalapeños
-2 tbsp jalapeño juice from the jar
-8 oz softened cream cheese
-1 cup sour cream
-1 1/2 c shredded colby jack or cheddar 
-3/4 cup parmesan cheese 

For the Topping:
-1/8 cup parmesan cheese
-1/2 cup Italian bread crumbs
-2 tbsp butter

What To Do:

Preheat oven to 400F
1. Place peppers, cream cheese, and sour cream in a large bowl and mix well.
2. To the mixture add the parmesan cheese, shredded cheese, and pepper juice.
3. Once all ingredients are combined, place in a 9 inch round or 8x8 inch pan and set aside. 
4. In a smaller bowl combine bread crumbs, butter, and parmesan cheese.
5. Spread the topping over the cheese mixture. Go lightly and don't feel like you need to use it all. I had a lot left over.
6. Bake for 20 minutes or until cheese is bubbly and heated through.
