No Fuss Stuffed Mushrooms

I love a good stuffed mushroom, but they always seemed so intimidating to make. I think I see a theme here. You probably have everything you already need to make these, they take very little time to put together, and they're completely vegetarian if that sort of thing matters to you. I based my recipe off this one, but simplified it to make it even easier and quicker.

What You'll Need:
-15-20 mushrooms, washed and cleaned. Leave the stems in for now (I bought the small pack and wish I had bought the larger one because I had lots of stuffing left)
-1 tbsp butter 
-garlic powder (to taste)
-onion powder (to taste)
-4 oz cream cheese
-1 egg
-1/4 c Italian Bread Crumbs
-1/4 c parmesan cheese

Once your mushrooms are washed and clean (does anyone have an easy way to do this?) Remove the stems and finely chop. 
Melt 1 tbsp butter in a skillet and add chopped stems, garlic, and onion powder. I didn't measure this and just gave a few shakes of each. 
While the mushrooms are sautéing, combine cream cheese (softened), egg, bread crumbs, and parmesan cheese. 
After 5 minutes, remove mushrooms from the skillet and add to the cheese mixture. Mix well. 
Using a small spoon or your (clean) finger, push the mixture into the mushroom leaving some sticking out of the top.
Bake at 350 degrees for 25-30 minutes or until mushrooms are soft

If for some weird reason you don't eat all of these and have left overs, I recommend warming them up in the oven on low vs. in the microwave as they can get rubbery easily.

  3. Yum Yum!!! Sign me up!! Have you ever tried putting oatmeal in your stuffed mushroomsin place of the bread crumbs? They cook in it and add some fibre. And you don't taste it at all.

    1. I haven't but that's a great idea!!! And a great way to sneak in a little extra fiber. I'm going to have to try that!

  4. I'm a big fan of stuffed mushrooms but have always shied away from making them because they seem complicated! Your recipes proves that wrong and they look yummy too!

    1. That's exactly how I was, but don't be intimated. The hardest part was actually coring the mushroom. The best part is you don't tell people how easy they are and then everyone will think you've slaved away making them:)
